Ingredients of the chocolate bar

— 110 grams of food grade cocoa butter (optionally, you can use cocoa paste cut into small pieces + 2 grams of finely grated cocoa butter).

— 70 grams of cocoa powder.

— 20 grams of coconut sugar, or the sweetener of your choice.

— 1 teaspoon vanilla extract.

— A pinch of salt, preferably grey or Himalayan.

Chocolate bar recipe step by step

1. Prepare the ingredients:

— Grind the coconut sugar together with the vanilla in an electric grinder until you get a powdered sugar texture. If you don't have a grinder, you can grind it with a food processor or leave it unground (keep in mind that you might notice the texture of the sugar in the chocolate).

— Grate the 2 grams of cocoa butter that you will add later.

2. Melt and mix:

— Heat the water in the pot until bubbles appear at the bottom. Make sure to keep it at this temperature.

— Melt the cocoa butter in a bain-marie in the bowl, making sure that the temperature does not exceed 46 °C. If the temperature rises too much, remove the bowl and let it melt on the counter.

— Once melted, add the cocoa powder, ground sugar (or unground sugar), salt and vanilla (powder or extract). Beat well with the whisk until you obtain a homogeneous mixture.

3. Temper the chocolate:

— Allow the mixture to cool to 35°C.

— Add the 2 grams of grated cocoa butter and mix with the whisk until completely melted.

4. Mold and decorate:

— Pour the chocolate into the molds you have prepared.

— Decorate with optional ingredients such as nuts (almonds, pistachios, hazelnuts), seeds (chia, pumpkin), dried fruit (raisins, dried cranberries), shredded coconut or even a touch of orange zest.

5. Cool and solidify:

— Let the chocolate solidify at room temperature.

— If you prefer not to temper the chocolate, you can place it in the refrigerator until it solidifies completely.
