Valentine's Day Chocolate Recipe

How to prepare Valentine's Day chocolates

1. Prepare the ganache

  • Chop the chocolate into small pieces to make it easier to melt and heat the chocolate in a bain-marie or in the microwave up to 45ºC.
  • Temper the melted chocolate, add the raspberry purée and the room temperature butter at the end.
  • Stir evenly and at a constant pace until you obtain a shiny, well-bound cream.

3. Stretch and cool the ganache

  • Stretch the ganache in a container that will give us a height of 1 cm.
  • Place the container in the refrigerator for 10 minutes.

6. Cut and cover the chocolates

  • Once the ganache is firm, remove it from the mould and cut it into small 2cm chocolates.
  • Melt additional chocolate in a double boiler or in the microwave in short intervals (20 seconds) to prevent burning. Up to 45ºC.
  • Temper the coating to 30ºC.
  • Using a fork, dip each bonbon into the melted chocolate, making sure they are completely covered, and place them on a baking sheet lined with baking paper.

7. Decorate and cool the chocolates

  • Before the chocolate hardens, you can decorate the bonbons by sprinkling a little dried raspberry on top if you wish.
  • Place them in a Tupperware in the refrigerator for about 15 minutes, until the chocolate coating is completely firm.

8. Enjoy your chocolates!

  • Store your chocolates in an airtight container in the refrigerator.
  • Take them out 2 hours before consumption at 20ºC.
